Ingredients:
2 cups fine white maize meal (preferably non-GMO)
4 cups water

Instructions:
Prepare the Sadza:
In a medium pot, bring 2 cups of water to a boil.
Gradually add the maize meal while stirring continuously to prevent lumps.
Reduce heat to low and simmer for 5-7 minutes, stirring occasionally.
Add the remaining 2 cups of maize meal gradually, stirring constantly until the mixture thickens and becomes smooth.
Continue to cook for 15-20 minutes, stirring regularly to prevent sticking or burning.
The sadza is ready when it pulls away from the sides of the pot and forms a thick, dough-like consistency.
Serve with Hodzeko:
While the sadza is cooking, prepare the hodzeko. If the hodzeko is too thick, you can thin it slightly with a little water or milk.
Once the sadza is ready, scoop it into individual bowls or plates.
Pour a generous amount of hodzeko besides the sadza.
