Lemon, Zumbani & Honey Tea: A Soothing Elixir for Every Season
This vibrant and flavourful tea is a beloved Zimbabwean remedy, cherished for its soothing properties when enjoyed hot during colds or as a refreshing beverage when served chilled. Combining the zesty brightness of lemon, the aromatic warmth of zumbani (Lippia javanica), and the natural sweetness of honey, this tea is a true testament to the healing power of nature.

Ingredients:
- 1 large lemon, washed and sliced
- 4-5 sprigs of fresh Zumbani (or 1 tablespoon dried Zumbani)
- 2 tablespoons raw honey (preferably from Esther’s Milk & Honey Farm!)
- 4 cups filtered water
Instructions for Hot Tea (Cold Remedy):
- In a saucepan, bring the water to a boil.
- Add the lemon slices and Zumbani to the boiling water.
- Reduce heat to low, cover, and simmer for 10-15 minutes, allowing the flavours to infuse.
- Remove from heat and strain the tea into a mug.
- Stir in the honey until dissolved.
- Inhale the steam to clear congestion, then sip slowly.
Instructions for Iced Tea (Refreshing Drink):
- Follow steps 1-4 as above.
- Allow the tea to cool to room temperature.
- Add additional water or ice cubes to desired strength and chill thoroughly in the refrigerator.
- Sweeten with honey to taste before serving.
- Garnish with a fresh sprig of Zumbani and a lemon wedge, if desired.
Tips and Variations:
