Nhopi: A Creamy and Nutritious Pumpkin Porridge

This comforting and wholesome pumpkin porridge, known as nhopi, is a cherished Zimbabwean breakfast dish. Traditionally made with pumpkin, maize meal, and water, this recipe adds a delightful twist with the addition of sour milk for a tangy richness and honey for natural sweetness. It’s a simple yet satisfying dish that’s packed with nutrients and flavour.

Ingredients:

  • 1 medium-sized pumpkin, peeled, seeded, and cubed
  • 1 cup fine white maize meal (preferably non-GMO)
  • 4 cups water
  • 1 cup sour milk
  • Honey and a pinch of salt to taste

Instructions:

  1. Cook the Pumpkin:

    • In a large pot, combine the cubed pumpkin and water.
    • Bring to a boil, then reduce heat and simmer until the pumpkin is soft and tender, about 15-20 minutes.
  2. Prepare the Porridge:

    • While the pumpkin is cooking, in a separate bowl, mix the maize meal with a little water to form a smooth paste.
    • Once the pumpkin is cooked, mash it with a potato masher or fork until smooth.
    • Gradually add the maize meal paste to the pumpkin, stirring continuously to prevent lumps.
    • Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes, or until the porridge thickens, stirring occasionally.
  3. Serve with milk, peanut butter and Honey:

    • Remove the porridge from the heat and stir in the milk, salt and peanut butter.
    • Pour the porridge into individual bowls or plates.
    • Drizzle with honey to taste.
    • Enjoy warm as a comforting and nutritious breakfast.

Tips and Variations:

  • You can adjust the consistency of the porridge by adding more or less water.
  • If you prefer a smoother texture, you can blend the cooked pumpkin before adding the maize meal.
  • Feel free to experiment with different spices like cinnamon, nutmeg, or ginger.
